Made from fully ripe fruit, the wine undergoes partial malolactic fermentation, carefully halted to preserve its fresh, natural acidity. Aged on lees for added complexity, it spends time in 20% new French oak barrels, with the remainder in neutral oak, resulting in a beautifully balanced wine.
